The wine has a deep blond colour, with an intense metallic structure. The Assyrtiko variety gives it power and balance, while the Athiri adds a soft sensation. The complexity of aromas from Aydani complements the overall profile. The volcanic soil and little rainfall create a wine with a rich body, intense minerality and a long, salty finish. Its ageing potential reaches at least ten years.

Food pairings : large fatty fish, shellfish, lobster, rich fatty dishes.
